Well I went out and did it again.
Fishing, this time for albacore tuna.
I brought home 6 of these longfins.
Sashimi, sushi are no-brainers. Grilling is simple and awesome.
I can do the mason jar in the pressure cooker, that's fine -- any suggestion for seasonings?
My daughter-in-law loves tuna, but she's expecting so nothing raw.

So I ask unto the board -- what favorites do you have regarding fresh tuna?
I gots lots, so if I goof anything, . . . oh well.

great catch!
I make this a lot with salmon, it's good with tinned tuna as well and would be fantastic with fresh. And this way your daughter-in-law could have some of it.

I have a nice Food Saver vacuum sealer.
I also have a large pressure cooker.
Can I do the canned tuna thing, or will the bag become damaged from heat and/or internal pressure?

Canning in a bag requires a special bag (retort pouch, available from a variety of suppliers), not compatible with the Food Saver (i've never seen one with the necessary channels).

For anyone interested in canning tuna, this is a pretty good site:

I've seen on BloodyDecks where some fishermen use metallic (aluminum) vacuum sealed bags using the VacMaster 215.
They vacuum pack their catch, then pressure cook the pouches in the same manner as the jars.

Yes, those are retort pouches. Compatible with chamber vacuum sealers, but not a foodsaver.
