How do I get roped into these things? Anybody got a recipe for sugar-free cookies?

I always substitute Splenda and very rarely have a problem.

Just substitute by volume not weight 1:1 Thus, 1 cup for 1 cup. This will not work where sugar is the energy source (i.e., for yeast to eat in bread making). It is a sweetener substitute.

Thanks. My dad promised I'd make 2 doz. sugar-free cookies and I've never done it before.
