I am working this weekend both Saturday and Sunday at the Assisted Living. Saturday night is Pizza night. I was asked last night if I wanted to make Pizza or have it delivered. The comments were the residents like a soft or doughy crust. Does anybody have an easy recipe suggestion for an easy to make crust for 40 people that will be soft and doughy and not crispy? I will have to do this in batches as they only have a small KA mixer and not a larger Hobart. |

Todd, I make this f/p version when I forget to make the no knead stuff. it can be quite doughy, especially if you don't spread it thinly. edit to add - use link in fuzzy's post below. |

Thanks, I think I will use this recipe and try to make my own pizzas for the residents. I have about 4 hours to make 5 pizzas and salads. I think I am going to make mini Banana Splits for dessert. They like ice cream. |

Thanks Fuzzy! Todd - for sauce, if I don't have the one we can in the fall, I puree canned tomatoes and cook slowly in evoo that I've first cooked some pureed onion and carrots and then minced garlic. Add the tomatoes and cook slowly until thickened, about 1/2 hour but ymmv with a larger batch. I add oregano afterwards. |

Why does this thread show up as a ful-width, tiny tiny type version? The rest of board is normal in its appearance. |

I'm running Safari (OS X), looks fine. Yah, lots of Canadian pizza recipes will feature soft doughy pizza as it seems the norm for "Montreal-Style" pizza (or at least some call it that in Ottawa, where it is also the norm) |
