Quick! The chanterelles are in at my local grocer, and surprisingly affordable ($10/lbs). What can I make from them?

I love chanterelles! Pierre Franey has a great trout recipe with chanterelles in his book "Cooking in France."

In a bit of shameful culinary oneupmanship, I am going to tell you that I was in the Burgundy region of France this weekend and scored some black trumpet mushrooms, both fresh and dried, which are black chanterelles (you should have seen the mushrooms at this market, every color of the rainbow!). I am going to make CI's mushroom risotto with mine because is really accentuates the taste of the mushroom. Chanterelles are also great warm on a salad with a slightly fruity vinaigrette (try juicing a passion fruit into your dressing).

If you can score some oyster mushrooms, shiitake, and cremini to go along with chantarelles, Cook's Illustrated Wild Mushroom Lasagna has many many useless steps, twenty ingredients, and uses no-boil noodles if you can believe it.

Add homemade noodles to the mix and the recipe uses every pan in the kitchen. Tastes good enough that it should be on every mushroom lovers bucket list.

Josh,

I adore chanterelles, and didn't pick nearly enough of them this year. Since they are so quiet, I usually keep away from dishes that have too many bold flavors. Anything with lobster or monkfish is wonderful. I also love them in omelets. I've done a number of chicken and veal dishes with them, but that doesn't help you very much.
