I want to make CI's cranberry nut bread for several people that are gluten intolerant. Has anyone had any experience with baking with this restriction?

IME, you need to start with a gluten free recipe; you can't make a regular recipe non-gluten and have it work.

A quick google search brought up a KAF recipe you may want to consider.

If you do try, let me know. I need some good gluten-free ideas.

In the world of GF baking, you've got to start somewhere, and a tried and true quick bread recipe with Cup 4 Cup substituted for all-purpose flour seems like a good place to start. It is designed with that use in mind and the xanthan gum is already there with nothing else to buy.

Go at it with fairly low expectations and you might be surprised when it turns out OK.

C 4 C is even available at some Wegmans stores. Not mine, but maybe yours.

I have to eat gluten free and use my own mix based on the Cup 4 Cup recipe. Most recipes (except yeast bread) have been quite good simply trading out the flours. I'm still seeking the elusive good bread recipe. Deb

All I really needed at Wegmans this morning was some chocolate chips to make a couple more batches of toffee this weekend, but when I got home I found a box of KAF gluten free multi-purpose flour and a bag of BRM Xanthan gum crouched in the corner my shopping bag.

I guess its time to try some GF baking. I like the idea of converting a quick bread recipe I know well. My favorite is Quick Cheese Bread and I am pretty sure I have the ingredients to make it GF.
