The recipe came to me in an email a few days ago and I couldn't get it out of my mind. Picked up the ingredients and now it's on the schedule for tonight. I love cooking in my Crock Pot since it frees me up to do other things. Hope you enjoy it. My favorite minestrone is Marcella Hazan's. Thanks for the reminder. I have some of the beef broth for her recipe in the freezer, so I need to get the veggies for it. |

The minestrone was a huge success! The aroma while cooking was simply amazing. I did make a couple modifications to the recipe, adding a handful of par-cooked green beans, as well as a handful of fresh spinach and I also started with two ounces of pancetta that I browned before addomg the onion and carrot. I'll definitely be making this a regular to my rotation. edited for clarity. |
