I do wet beans and saucy sautéed veg with rice, guacamole, and salsa (I skip dairy too most of the time). I do fajita vegetables tossed in a bit of fajita marinade (lemon juice, olive oil, cumin, oregano, garlic, and red pepper flakes). A nice Valentina sauce or choloula sauce in the burrito helps too.
Oh, I use salsa rice too, that helps with flavor and moisture.
