While my variety of sandwhiches is relatively small my products are pretty darn wonderful.
However, it's spring (finally) in Canuckland, sun is shining and warm (it can shine and freeze your...), I've been playing with hard boiled eggs in prep for 'Bunny Visitation Day'. Hence, I needed to eat some hard boiled failures and I was bored with my ideas.
I made these for my darling for lunch today and, YES!, we have a winner - maybe not for always but it is darn good. I am a BIG fan of Serious Eats and their methods, so.......

The additon of fresh lemon zest and juice, the absence of mustard, and the hand crumbling of the eggs along with the little crispy celery and scallion bits makes a delicious, quick, and delightful snack - especially on some toasted whole grain bread.
I'd certainly love to hear about your favorites for lunch in spring/summer (especially sandwhiches) keeping in mind that this is a quick lunch hour meal and then it's back to work!!
