With peaches being in season in the Great White North (i.e., available at Costco... ;) ) I found this recipe. While I have not made it yet (but will this weekend as Canada Day is July1), I admired the background of the chef providing it. https://theappalachiantale.com/2018/08/30/peach-spoonbread/

I like a corn spoon bread at thanksgiving.
