I love turnips. One of my favorite recipes is the glazed turnips from James Peterson's book Vegetables.
Peel and cut two pounds of turnips into 1/2 inch cubes. Put them in a saute pan just big to hold them in a single layer. Pour water over until it is halfway up the sides of the turnips. Add 1 tablespoon butter, 1 teaspoon sugar, and salt to taste. Bring to a simmer over high heat, turn down to medium. Then place a piece of foil or parchment loosely over the turnips. Simmer 15 minutes or until they are almost completely tender. If there is water in the pan turn the heat to high to evaporate it. Stir them until they are browned. Add two tablespoons water to the pan to deglaze the caramelized sugar, to coat the turnips. Add fresh pepper to taste.
You can add two tablespoons cream instead of the water at the end if you like.

Hi Kathy, Last fall, I used turnips in a medly of roasted root vegetables that included parsnips (which I ADORE), carrots, etc. The parsnips and other things were wonderful, but the turnips just sort of shriveled up - not good at all. I was dissappointed. I like Becca's recipe that uses liquid, it sounds really good. Just don't roast them plain.
I've not done the oysters yet. We are so snowed in here that I'm only going out for short trips. Another 6 inches today. The roads are still full of awful ruts from our big historic snowfall, some areas did not get plowed and now the roads are suffering. Costco (where I would get the oysters) is just a distant memory, it's been a while since I've ventured down there.
