I've not used it, but like you have always used Madagascar...they're just so floral I have a hard time with switching.

Mer, Kris uses Mexican vanilla a lot, and prefers it. However, you have to be real careful about sourcing; there isn't much in the way of quality control, ingredient verification, or even checking for poisons in the Mexican vanilla trade. The brand we're using now is Xanath, they're also available online: http://www.theposter.com/vanillaextracts.html(yes, their online store is 1994 tech)

Amy Hmmm - I don't like the sound of "floral." That would cancel the idea for me. Thanks. Edit: I thought it was the Tahitian that was supposed to be floral.

I'm just wondering, though, if it would be too strong for my chocolate stuff. And since the majority of the things I make are very deep chocolatey, I'm concerned whether or not such a strong vanilla would lessen rather than enhance the chocolate taste. I know the Madagascar rounds everything out, and I like it in my chocolate goods, but I'm not sure about the Mexican. It's supposed to have somewhat of a spicy taste, and from what I've read, is supposed to be good in chocolate stuff. But who knows?

I love Mexican Vanilla, but I use it when the dish has strong flavors -- like chile or ginger -- then it seems to balance things off. By the way, it's great in French toast -- goes really well the cinnamon.
