Post subject:  No-Knead Bread

I made the seeded rye version of the CI No-Knead bread last night. I needed it for Reubans, so I wanted a more cylindrical loaf than I could get in a DO. I decided to bake it in a clay roaster. It came out great, except for being a bit under-proofed, but that was my fault, not the roaster's.

Haven't tried it, but highly recommend Dave's rye as well.

It had maybe a little bit too much caraway. I love caraway, but it did overshadow the rye flavor. I'm thinking about adding a bit of toasted rye flakes next time. Someday I'll try Dave's rye, but I didn't have the necessary ingredients.

I made a couple different rye bread recipes last week that used sauerkraut (for one recipe) and dill pickle juice for both. The sauerkraut one turned out a bit stumpy, but with very good flavor and the other was nice and tall and also with very good flavor. Used both for Reubens.

Rye bread is hands down my kids' favourite bread. Lovely loaf! I have the sponge for tim's ww bread in my fridge. Will have to look at that CI recipe, I liked the lahey one so never bothered with the .2 version from CI -oh, and second the dave's rye vote
