I have so many egg whites sitting in my fridge right now (my menu for the shower used a lot of egg yolks), that I'm feeling the need to make some swiss meringue buttercream. And, I'm thinking cupcakes!

My favorite is an Ina Garten one....her coconut cupcakes, which she uses a cream cheese butter cream frosting, but would work with a meringue. I don't have time this morning to type in the recipe, but you can find it on www.foodnetwork.com. ilene

I like CI's chocolate sour cream bundt cake made into cupcakes. Angel food cake is another great way to use up egg whites.

I'm just not a big Angel food cake fan.
Really like the idea of converting the chocolate bundt cake...that is a good recipe. Ah, the good ole' days when CI's recipes made sense...

I am not going to be any help at all here as am not much of a baker and the only cupcakes I have ever made is the chocolate cake recipe with the vinegar that my kids love popped into cupcake tins. Just wondering though if you need to make any adjustments when making cupcakes from a cake recipe other than baking time.

Mary, It totally depends on the cake...there are many different types of cakes using many different mixing methods, which has an impact on how it bakes. Bet you didn't want that answer. Amy

The CI white birthday cake made into cupcakes is good, just omit the nasty almond extract and use more vanilla.

The CI dark chocolate cupcakes are one of my most often made CI recipes. It is my very favorite cupcake recipe.
