Interesting concept, but I would rather just eat a carrot cake cupcake with icing rather than a muffin with the filling. (and coincidentally, I made carrot cake cupcakes last night!)

Have you made these yet?

I haven't made these. The recipe just came in my e-mail today. Has anybody ever used Fiori De Sicilia?

I have, it's STRONG. use sparingly. I can't quite see that flavour with carrots though.

Well, I did make these last night (Friday). I had all the ingredients on hand and Carrot Cake is my favorite cake, so I thought why not. The muffin and the cream cheese filling aren't overly sweet which I like and I guess this would classify this as a muffin instead of a cupcake. I used a large hole grater for the carrots, because I like to see pieces of carrot. I baked them for 20 minutes at 390 convection. I will post a picture on our Facebook page.

I bought the fiori de Sicilia and used it once. I did not like it. I might should try it again though.
