It is embarrassing how many bananas I have in my freezer. :oops:

We are having friends over for dinner, and they're staying the night, so I thought I'd put them to use by making banana bread along with smoothies for breakfast.

What's your favorite banana bread recipe?

I don't like banana bread. (hanging head in shame)

I do like banana cake, specifically Rose Berenbaum's fromThe Cake Bible. I omit the lemon zest/extract though as I find it distracting. If you don't have the book I can PM you the recipe.

I really want to make bread instead of cake, although given how many bananas I have, I can see a cake in my future. Don't feel any need to rush in getting me the recipe though.

I really like the banana marble cake from Cooking Light. They also have a Jamaican one that is good too. I usually don't do light for desserts but these are very good.

Amy, didn't Mickie (RIP) have a good one? I can't see it on my PC though, will look again.
I don't like bb either but the one from NBR got raves when I made it for the family.

You're right, she did. I converted it to a cake about five years ago, but don't have the original recipe. Anyone?

Edited to add: That's right, it was a cake recipe. I simply revised slightly to accommodate a round, tiered cake. Thanks Jean!

The Kenji recipes looks good, but I simply don't have time to make a yeasted bread today.

Jean, as it turns out, Mickie's recipe is actually fairly close to one from MS I've used in the past. I sort of combined the two, adjusting for altitude. It's in the oven now.

Amy, here's the banana bread recipe my family has used for a very long time. I think it came from my grandma.

1/2 cup chopped nuts (I use more)
1 cup mashed bananas
1-1/2 cup sifted flour (I don't bother to sift)
1 tsp. baking soda
1/2 tsp salt
1/2 cup butter (I use salted as that's what the original recipe uses)
1 cup sugar
2 eggs
1 tsp vanilla
1/2 cup sour cream

Combine butter, sugar, egg and vanilla. Cream well and add bananas, sour cream, nuts and flour mixture. Beat until well blended and put in greased pans. The recipe says three small pans, but I always use 2 standard size bread pans. Bake at 350 degrees.

It's very easy to make, moist and yummy.
