Post subject:  Ice Cream Sandwiches

Are there any secrets to making Ice Cream Sandwiches? I have made them successfully years ago, but can't find my recipe. I believe it was a chocolate chip cookie. So if I want to use my go-to cc recipe, is there anything special I need to know? thanks!

Hi Cookie,
It makes sense to use slightly softened ice cream so that your cookies don't break when you press them together.

That part I know; however, I usually make my cookies pretty soft. I'm wondering if I need to bake them a little longer. Also, maybe thicker?

Okay, no one seem to be chiming in here...so today I will be baking my regular cc cookies and then softening some ice cream to put between 2 cookies....any advice, or just do that as planned....nothing else special to add? Thanks!

Personally, I think an ice cream sandwich cookie should be soft...that's my childhood memory of them anyway.

One weird thought -- would it help to partially freeze the cookies first and then let the ice cream and cookies defrost together until the ice cream has reached the desired consistency?

Lindsay, do you mean freeze the cookies first if you are planning to eat them right after assembly? I am making them to take to a party later in the day...

Not Lindsay, but I think what she meant was to partially freeze the cookies before filling with partially softened icecream so as to not have them fall apart. I'd do that, wrap them in saran/wax paper and freeze until needed.

I buy a great ice cream sandwich from our school's hot lunch program (I get them by the case for the summer, a perk of being on parent council) and the cookies are soft. 2 kinds,a double chocolate and a regular chocolate chip. Both with vanilla icecream. The kids love them.

I will try it this way; thanks for the suggestions. I'll let you know how they turn out. And looks like we'll be eating them in the rain, not on a sunny deck.
