Help wanted,

My wife uses about 1 3/4 pounds of Isomalt every year for windows in her gingerbread houses. (I'll have pics in two weeks.) Invariably, we have some left over which is carefully double bagged.

The first houses of the fall, all have cloudy windows. I'm certain this has to do with the shelf life on the isomalt.

Does anyone have a clue about the nature of the problem?

Actually, isomalt is considered quite stable, but since it's the first windows each year (made with leftover isomalt from last year I presume) humidity is the likely cause. You can try adding food-safe dessicant packages, and storing in an air-tight jar.

Thank you so much. I told Lib that you would have an answer.

Lib is not participating in our Festival of Trees this year. She would spend $100 on materials and 29 hours on her houses which usually sold for $100. Her PEO chapter raffled off much simpler houses for $650. So...

Downtown Springfield, Inc. has an annual Holiday Walk on mid-week evenings. In conjunction with this event, Lib organized a Gingerbread House Raffle to benefit the Springfield Area Arts Council. (Can you possibly imagine that our Arts Council could use the money?) This gingerbread houses will draw shoppers downtown for the local stores and great restaurants, all local businesses.

Lib plans on making 8 houses and two friends are making houses for the event. I am just a bit proud.

ps: We'll visit our pharmacist friend today for some dessicant packs.
