Post subject:  What's wrong with my cookies?

I always make the same CC cookies, and usually get rave reviews on them. BUT, when I am in my desert home, they never turn out the same as they do up north...the first batch I made were dry-ish turds. So I just tried them again, and after about 6 minutes noticed that they were still blobs, not relaxing at all. So I smooshed them down with my spatula, and they were okay, but still a little thicker than I like. I smooshed the rest of them before I put them in to bake.
So, what is the issue? Same recipe. Albeit, a different oven, but I've never had this issue with any other ovens. Do I need to reduce the flour by about 1/4 C because of the dryness here? I never thought about that, but can't think of any other reason they would be so different. Any ideas? Thanks!

I moved from Florida to Arizona, then 5 years later, back to Florida. I found that most of my baking recipes had to be adjusted when I made such a dramatic climate change. I found that I usually need more liquid and more fat in proportion to the flour in the dessert than I do living on the Gulf of Mexico.

Your idea of reducing the flour by some amount will probably help.

I live "high and dry" and while I generally do not need to adjust recipes other than leavening, sometimes I do need to adjust liquid. Go with your instincts...if the dough feels dry, add more liquid. That's what I do with breads here a great deal, and it has served me well.

Thanks for the input. That's what I was thinking, but not sure what kind of liquid to add to a cookie. That's why I was thinking about reducing the flour. Any hints here?

An extra egg yolk is one idea, adding both fat and liquid at the same time. Changing out some butter for oil could also help.

That was my thought too Becky.

Thank you! I won't have a chance to try this for quite a while...I am heading back to the NW tomorrow, but I will try this next time I am here and let you know what happens.
