I'm catering an event this coming Friday (heavy apps) for 200. I want to do a dessert app served on porcelain soup spoons with chocolate soup, some sort of cream from my iSi whip (haven't decided what yet) and then topped with homemade cocoa puffs dusted with gold (or a piece of gold leaf)...I'm going to experiment to see what looks best and is also not too labor intensive...I've only got two servers to help.
Has anyone made anything approximating homemade cocoa puffs, or even just puffed rice?

You and I have different definitions of "not too labor intensive".

Yah, I know...
It's just that this event is one of the premier fundraisers every year, and I want everything as special as possible. It could mean a lot of new business for me.

I'm wondering about mini chocolate meringues...Seems to me a book I have of Pierre Hermes' uses cigar shaped meringues on a cake...

Seems like if anyone would have a recipe for homemade cocoa puffs, it would be the Momofuku Milk Bar cookbook. Have you checked?

Amy, I am assuming you don't mean just buy regular rice puffs and toss in cocoa. If you mean making them from scratch, I think making the rice puffs won't be the issue as all you do is make rice, spread on a cookie sheet and dry in the oven at the lowest temp for a couple of hours and then fry it. The rice will puff and you can toss it in cocoa. The problem is that imho, it will not look pretty or classy. I'd go for the meringues, plain, choco, raspberry or whatever. Then again, I love meringues.

Thanks. There's more to it than that in terms of presentation, but this is beginning to sound like too much effort, so I think I'm going to devise a plan B.

I wound up googling homemade cocoa puffs and they all seemed to be made by popping amareth (?) for a much smaller puff. But looked cool.
