My BIL is getting married next month, and they've asked me to do their wedding cake. This is a second marriage for both, and it's not going to be traditional. They said, "you could make whipped cream pies for each of us to throw at each other, and we'd be happy."
The glitch is that the wedding is in NJ and I cannot arrive until three days before. So, here's my plan...
I'm going to make one small cake (a Lemon Praline Torte from Karen Krasne's Extraordinary Cakes...great book btw), and then I'm going to make two different kinds of cupcakes, which are pretty much the rage in the wedding world right now. One cupcake will be lemon with some kind of filling (possibly lemon curd, since those who love lemon would gladly overdose on it) and some flavor of buttercream. I'd use the praline from the cake on top of each cupcake. The second flavor will be chocolate, since there will be a fair number of kids there. I'm trying to think about what to fill those with. Ideas?
All of the cupcakes will be topped with candied pansies...very pretty and easy to do. The lemon ones with yellow pansies, and the chocolate with blue, as that is pretty much the one color I understand is consistent in their decor.
All thoughts appreciated.

Amy I am hosting a shower for my neice here in about 10 days....her other aunt is driving from Kansas and bringing cupcakes to make a "cupcake" tower ( I have no idea what that will look like). As I understand it, she is have a friend make a mix of cupcake flavor and then decorating with either pink or white icing and cherry blossams (non edible, I think). Anyway, I shudder at the thought of it all. What you described I think will be lovely and a great mix of flavors. Ilene

Not fancy but I'd do Chang's Crispy Magic Frosting. DD made for chocolate cupcakes for her brother's birthday and they were really good. It holds up really well as as a filling and frosting, and is not overly sweet. Otherwise, just buttercream or maybe add some coconut to some (a la Mounds). I love the lemon praline torte and lemon cupcake ideas (huge lemon lover) but an option without nuts would be good.

I saw a marshmallow mousse on Sprinkle Bakes that would I think could be adapted to a great cupcake filling.

I made the lemon praline torte yesterday as a test cake...omg, how friggin' good is THAT.

No, I'm just doing that for the cake. I'm making lemon cupcakes filled with lemon curd and lemon buttercream with a sprinkling of the praline for one of the cupcakes. The other cupcake is chocolate filled with chocolate caramel ganache and topped with coffee buttercream.
I'm doing candied pansies on top of each. Today's project...thankfully one of my nieces is coming over to help. (I got to NJ yesterday.)
