My oldest son's teacher is having a baby and the class is having a baby shower. (cue the awwws here since 14 of the 21 are boys). I made whoopie pies (chocolate) and am making the filling tomorrow. I made them smallish and will use the Cook's country filling for them. I'd like to decorate them somehow. My thought was to roll the edges in blue and pink coarse sugar and put them on a tray in baby themed cupcake liners. Or should I put a dollop of filling on the top of the cake and sprinkle the sugar on the dollop? Decorating is not my strength. My plan is to keep the colours separated...or should I mix them together? I tried to find baby themed sprinkles but no luck.

Hi Fitzie, Thanks. I don't have food colouring in those colours and hate to buy just for this. Plus not sure about how those pastel colours would look with such a dark chocolate cake, and am pressed for time so making 2 batches of filling (or splitting them) doesn't appeal. Do you think the sugar on the sides would work? I won't put too much regardless since I don't want to make them even sweeter.

It is my experience that decorating or sanding sugar is perceived as texture and not sweetness since it must dissolve before it can be tasted. Since texture is critical, I like finer better than I like coarse. It is too late for this project, but we buy several colors of sanding sugar from Kitchen Krafts. 3 pounds lasted us nearly three years and it is on our list to reorder soon.

Jean, I think the sugar would stay on. Try one and wait a while to see how it looks before you finish the rest. Obviously, I'm no cake decorator!

I made these again for my son's confirmation party. This time I cut them in half and filled them so the pies were actually a half moon shape. And I used the frosting recipe from the epicurious Devil Dog cake (here: http://www.epicurious.com/recipes/food/ ... ake-241516) and these were the best ever. I doubled the frosting recipe as I had also doubled the whoopie pie recipe and that was a mistake, I had way too much frosting. I plunked the leftover frosting into a container in the freezer but no idea if it will thaw okay. Figured it was worth a shot.
