I baked Cook's Illustrated's Ultimate Banana Bread and was very disappointed. The taste was great, but the texture was too wet and dense. I like moist, not wet. Instructions were followed perfectly, and the toothpick came out clean. Plus, my oven is extremely accurate. This was a ton more involved than typical banana bread recipes - it was a PITA, and in the end, I wasn't happy with it. I was very surprised, because this recipe had lots and lots of great reviews.

My wife, who is hard pressed to cook anything, can make a decent banana bread, even make up subs as she goes. How much effort did they have to go through to complicate such a sure-fire recipe? I'll recognized that there is probably an ultimate banana bread, but seriously, this is one recipe that is really reliable.

I've had the same reaction to that recipe. It was NOT a hit at my house. The peanut gallery felt that 1) it didn't taste great, and 2) was "gloppy in the middle" despite being fully cooked. Betty Crocker's recipe OTOH (which is a nice, simple, straightforward, bare bones recipe) always turns out good. I also like Ina Garten's recipe for the 9 inch cake version with cream cheese icing.

Good to know I'm not the only one who didn't like this. I posted my results on a few other forums, and several people were also very disappointed with it. The texture was so bad, I had to throw it out.

The recipe in Silver Palate is worth making, more cake-y than gooey.

I had success with it in that everyone I know who tried it liked it (the kids and I hate banana bread) but it gave my husband heartburn for some weird reason. I have a recipe given to me by my cousin that I make that's easier and he loves. And I use the same recipe subbing shredded zucchini and the boys and I love that one.
