I like the idea of a cornstarch ice cream. It's not totally real ice cream, but seems a little healthier.
No doubt I shall investigate a number of possibilities!
Can't wait to try it, but for the moment I'm still waiting for delivery.

I finally made enough room to put my KA ice cream bowl in the freezer today and then saw the references to Jeni's Salty Caramel Ice cream. So I had to find it and I found it here: http://www.bonappetit.com/blogsandforums/blogs/badaily/2011/07/tuscan-sundae.html. I put it in my LC, so here's the reformatted version in case anyone wants it.

EXPORTED FROM LIVING COOKBOOK

JENI'S SALTY CARAMEL ICE CREAM

Servings: 6
Yield: Makes about 1 quart

2 cups whole milk
4 tsps. cornstarch
1½ oz. cream cheese, (3 TBS.) softened
1/2 tsp. fine sea salt
1¼ cups heavy cream
2 TBS. light corn syrup
2/3 cup sugar
2 tsps. vanilla extract

Preparation Time: 10 minutes Cooking Time: 20 minutes Inactive Time: 4 hours and 30 minutes Total Time: 5 hours
