Thanks for the info, Carey. I'll have to boil a gallon of water in my Fagor, and see if that is faster than those other two. If not, I'll consider myself lucky. I tested some Cuisinart saucepans I got at a bargain, and they were as fast as AC - otherwise, I was set to send them back! You've proven my fears, about some brands being less efficient. I wonder when CI or CR will test for this, given how many more people are getting induction ranges or cooktops.

I wish more manufacturers would offer combo cooktops...a couple of induction burners and a couple of regular ones. I have too much invested in my copper cookware to give it up, but I also have some cast iron and other pans that would work with induction and would like to use that technology. I had a portable induction cooktop but it blew up, plus I don't have room for one in this kitchen.

I know what you mean, Darcie. I have far too much copper and calphalon cookware to go 100% induction, but it is great to be able to use it in the summer. I just keep the burner (along with my molcajete) on the huge griddle on my commercial range, which I very seldom fire up. In the cold season, it gets put away 'til next year!

Darcie,
I often say to DH that my ideal if we win the lotto would be to have a combo of gas and induction. At this point I can't see giving up the induction, but a gas burner or two would be perfect to go with it. I do miss toasting tortillas, roasting peppers, and having a bit more oomph for stir fries than I do sometimes.

Makes me feel that at least something is right and predictable in the universe, even if it comes in the form of family squabbles.
