I can't imagine rinsing rice for 15 min., or even 5 min! Soaking maybe? I just rinse it, pour the water off, and repeat 3 or 4 times until fairly clear.

Kenji has a bunch of pressure cooker recipes in this week's Serious Eats.

I got a big bunch of beautifull, huge organic beets that were about the size of medium oranges. $1.99 per bunch. pressure cooked them in the IP for 35 mins. at high pressure with natural release. Could have gone a little less but I was guessing on the time. Man, I love beets.

BTW, while there are very few 1-star reviews, of those, the majority complain about the finish coming off. Have any of you experienced this?

Are you talking about the IP? What finish is coming off?

Wino, I think you're referring to something other than the IP? it has a stainless pot.

Thanks so much for starting this thread, Alina. I got an IP a while back but have only used it so far for brown rice. I've just got to get more creative! Emlie

My only complaint is how long it takes to come up to pressure. Three minute oats that take ten minutes to start cooking aren't much faster than oats on the stovetop. And if the pot is rather full it can take close to half an hour.

Given that it is 110V device, it probably takes longer to come to pressure then a stove top model (though its max pressure is lower, so that may offset it some), but in general it kind of bugs me how many pressure cooker recipes claim "Cook X in 5 minutes!", but you have to bring to pressure and in some of them do a natural release, making that 5 min much more like 25 or more. Most of those very short recipes often have little actual time advantage at the end. On a stovetop model, it is actually a hassle as there is a little baby sitting for that process; one of the great advantages of the automated models is that it might take a while, but it is hands off; kind of the same argument as for rice cookers.
