Phoenix,

I find I take out my mandoline no more than once a month. It's not generally useful, pretty much just when I need a lot of very thin slices of something. However, there are certain recipes (like zucchini carpaccio, or pickled ginger) which simply wouldn't make if I didn't have it.

If you don't already know you need one, I'd suggest starting with an inexpensive v-slicer. I have a fancier mandoline, and almost everything I use it for, I could do on a v-slicer. The latter also takes up a lot less storage space. If something happened to my mandoline, I'd replace it with a v-slicer.

Oh, and another vote for getting a kevlar glove.

I make Julia's Pommes Anna several times a month. It's a great lunch with a good green salad and garlicky vinaigrette.
