Post subject:  "Flip" omlette or frittata pans?

Folks,

I was at W-S today looking at some of these:

And what I'm wondering is, how does this actually work? I mean, when you flipped it, the top pan would be cold, wouldn't it? Which would mean that it wouldn't brown the frittata/tortilla on top, which would also stick.

Anyone used one of these?

I've never used one Josh, but it looks like they come unhinged easily and you could heat the empty one on a burner, attach it and flip....but I don't know why, since it is easy to use an empty plate to flip a frittata

I make fritattas, tortillas, etc. less than I otherwise would because I find the flipping a pain.

If I was a real pro like Amy I'd just flip it in the air, of course.

Yeah, right.

I can flip a lot of things, but I've never flipped an omelet.

I just put a dinner plate on top of the pan, flip the pan over (fritatta is now on dinner plate) and slide fritatta back into pan....seems easy to me. But I think this pan would work for you, as long as you heated the empty side, re-hinged it and flipped it. It might be worth it if you plan to use it enough....and, unhinged, you have two nice saute pans.

The problem is that I'm generally making 11" fritattas. So that's a little awkward ... the pan is heavy for one hand, and I have to use a serving plate. If I made more modest-sized ones, I suppose it would be easier ...

My parents used to have an omelet pan that hinged in the middle, like folding a normal pan in half. It was a cheap thing but worked great so I imagine this would too. I also use the plate method and find it awkward and would probably also be tempted. It would also be good for rösti.

PS who am I kidding, they probably still have the pan. Last time I was home I threw out some potpourri my mom had in the bathroom because it was mine from before I left the States in 1989.
