12 years ago, Caphalon released something called the Everyday Pan, a sort of flattened non-stick wok with short handles. This was the ideal pan for almost anything which needed to be started on the stovetop and finished in the oven, such as paella, souffle pancakes and matzoh brie:

However, Caphalon changed the design of the Everyday Pan in 2002, making it shallower, flatter, and basically useless. So I haven't been able to replace mine since.

But this spring Tramontina introduced their porcelain-enamel-nonstick Everyday Pan, with the exact same design as the old Caphalon one! It was at Costco, even, so my inlaws snapped one up for me. Yaaay!.

Used it today for Matzoh Brie. Worked great. I'm going to buy a second one as backup in case they go off the market again.

Also love mine -- the absolute best thing for a frittata (cook on stove and finish under the broiler in the oven).

Lindsay,

Warning about the broiler: the new Tramontina one has silicone-coated handles, which may be a problem with the broiler.

I suppose one could just peel the silicone off ...

I use my original so much....not daily, cause I don't cook daily, but it is a great design.
Good thing I can't go to Costco right now!
