The KA stand mixer my wife procured comes with a coupon for a "free" ice cream maker. I'm about to mail it in. I have no clue how to use this; any experienced users out there? Recommended recipes for the slurry o' cream? What about frozen yogurt, sherbets and such? Any recommended WWW sites? Summer's around the corner and the Mrs. will want me to become productive. TIA |

Not used one but they were well rated by CI, for what that is worth. Great for small batches. I ended up with a Cuisinart ICE-20 which is a stand alone unit that works on the same principle. Freeze the bowl, chill your ingredients, make ice cream. If a custard base you want hardened, not soft serve, just put the finished ice cream in your freezer and let it ripen for 8 hours or so. Handy unit for a couple of pints to two quarts. If you have a freezer with room, just store the bowl there permanently so you can make ice cream on the spur. Recipe wise, I've gone through a couple of Ice Cream books and for my basic vanilla and chocolate, I've ended up using CI's recipes. There was a great chocolate ganache ice cream recipe here recently. Hit eBay for your vanilla beans, I love vanilla ice cream made with real beans, not extract. They can be procured much cheaper on eBay than from most local stores. |

I don't have much room in my freezer so I also chose a free standing model. Mine just has a disk that I keep in the freezer. |

I am a huge fan of Jeni's Splendid Ice Creams book! It beat out my previous favorite, David Lebovitz's book. |

Jeni's is the basic recipe I use and can be used with any ice cream maker. This recipe lasts much longer in the freezer than any other recipe I tried....end product stays creamy longer and doesn't crystallize as fast as most homemade ice creams. |

I have the KA model and it's awesome. But space is definitely a consideration -- if I didn't have a chest freezer in the garage I'd have a really hard time making room for it in my freezer inside. And speaking of ice cream books, I just got a new one for Mother's Day called Sweet Cream and Sugar Cones. It's by the same people who did the recent Bi-Rite cookbook. What attracted me to it (besides the fact that I really like the look of it) was a review on Serious Eats of their Salted Caramel flavor. (I looked through the Jeni's book, but it seemed like a lot of them were really funky flavors. I'm not very adventurous when it comes to ice cream.) Oh -- and my other Mother's Day present is a donut cookbook/pan. So apparently I'm going to have a hard time fitting into my shorts this summer ![]() Emilie |

I put it on my list of things to buy when I am in the States next month. I made another ice cream recipe with corn starch and was a little skeptical at first but everyone loved it. Mary |
