Thanks for all of these. I am wanting to experiment with more detailed accuracy in my own recipes. I find the Thermapen too slow, at times, and also like to indulge in gadgets!

I've had a Sentry for many years, and have had good success with it, though its uses are limited in cooking. The main problem when using them is that the least bit of steam or smoke coming from an item will give a false reading. And, of course, you are getting a surface reading, while in most things we want a temperature in the middle. Do you have any particular applications you wanted one for? |

I got one at Harbor Freight. Seems to work (but Kathy doesn't appreciate the culinary utility and has banished it to the garage). |

I have a Fluke, but it appears to be the same as a bunch of other models. I love it and use it constantly. For example, I've found it is a great way to take the temperature of oil. I also use it very regularly to put things in a pan at exactly the temp I want to. It works great on dark pans, and very poorly on shiny dry pans (but works reasonably when you put some oil in it). It'll tell you the temperature of your simmering water. I think it is underrated for lots of cooking tasks. Of course it is not replacement for a probe thermometer, but an useful adjunct. |

It was just a fluke I got a good one  My wife bought it for me as a present, and she probably consulted her dad who is a hardware guy. Or maybe I told her.Sample usages: - When making crepes,making sure you pan is where you think it is. Also used for abelskiver. And some other delicate frying tasks. - Deep frying, makes an excellent oil temp. The oil generally circulates well and the surface temp is very close to the other temps. If you are frying something, you need to avoid the steam a little. - Seeing where the hotspots on your pans are, and how bad they are. This will help you dispel the myth that cast iron distributes heat evenly (in fact it is awful). You can actually shift your food a little in some cases. - Checking how cold your fridge is. All the surfaces that have been in there a long time will be at 'fridge temp'. Fast and easy check, and to see if the door, etc. is too warm. Don't point it at shiny things. - Check your baby bottles. I shake em up, point it at them. Important point when measuring small things: The measurement area is below the laser. Normally, this is no big deal, but if you are measureing something small, it matters. Also, it measures a cone, so you need to be close for small things. Basically any time you want to measure a surface, or liquid that is well stirred (for heated things convection generally stirs them fairly well) it works great. And fun too! |
