Post subject:  Kitchen Aid Pro 600 - Pulled The Trigger

After threatening to buy one of these for years, we finally did it. My wife took a baking class here in the Philippines and with my encouragement, she's been doing apple pies, cinnamon rolls, cupcakes, and cookies. After spending a week solid kneading dough due to orders for the Holidays, she finally relented and said, "Buy it!".

At the same time, I was reading Ruhlman & Polycn's Charcuterie, trying to improve my sausage and hotdog making. Wha-La (kind of a SE Asian "Voila") and Michael R talks about doing the "primary bind" and even "emulsifying" with a stand mixer. And as I'm eyeballing the different KA accessories, I run into the water bath for 5 and 6 quart units. So I can fill it with ice water and keep the meat chilled while the KA does its thing!

All of it ordered now and due here in June - The Pro 600, a spare bowl, the Metro beaterblade, and a water bath. She can bake, I can emulsify, and everyone is happy, happy, happy!
