Sorry, I should know this, but ... going to buy Vollrath / Wearever half sheet pan. I see different ones with 13 gauge, 18 gauge, 16 gauge. I guess this is the weight? Which is best? And... is Amazon the best bet for price? Thanks!

Iirc, smaller number = thicker gauge. I think the 13 is what CI recommended.

Lexy,

Carey is correct. "gauge" is "fraction of an inch", more-or-less. So 13-gauge is 1/13th of an inch, and 16-gauge is 1/16th, making it thinner. The 13-gauge are the heavy-duty, food-service-grade sheet pans.

I don't know, however, if Amazon's prices are any better than anyone else's.

Thank you! It doesn't seem like many places carry the 13 gauge.
