Our big nonstick pan is starting to stick, so it's time for us to look for a replacement. As such, we listened to the whole pitch by a Vollrath Ceramic II vendor at the Alameda County Fair. Certainly his demo was impressive.
Online reviews, both of Vollrath, and of the new ceramic non-stick coatings, seem to be pretty good. Anybody have experience with these?

Details on Ceramicguard 2 are sketchy, but it appears to be a conventional PTFE coating made without PFOA according to new EPA guidelines. Considering the reviews of silicone based green pans, that is good news and considering the amount of cookware experience that Volrath\Wearever have, I would expect the pans to be excellent performers and a good value.
I am still using a T-fal Professional Non-Stick 12" Fry Pan and am satisfied with its performance.

I'm a Vollrath fan; their regular nonstick has outlasted any other brand I've tried.

Same here. We have a store here for restaurant wholesale that gives 5% off for cash and carries a lot of Volrath - cha-ching!

So, I'm looking to buy some Vollrath. However, they have three different non-stick coatings: the CeramicGuard II, the PowerCoat2, and the SteelCoatX3. I'm not really clear on the differences between the coatings and the Vollrath website isn't much help. Anybody know anything? I ordered the 10" from Amazon. I'll give you a report back when it arrives and I give it a run-through. Amazon reviews for the Vollrath Ceramic II were very good, lots of people citing 10-year lifespans.

My favorite pan is a 3-qt. non-stick sauté from All Clad. Unfortunately, All Clad no longer offers a non-stick sauté. My guess is that with their lifetime guarantee they've replaced quite a few. Do you know if this style available in any other quality brand?
