Looks like the British version of the American Icebox Cake ... only bicuits/chocolate are inverted. Not that I look down on that; Kris made me Icebox Cake for my 39th birthday, and it was wonderful. http://smittenkitchen.com/2007/01/wafer-wonderland/ |

That actually looks good to me. It's interesting that they use fruitcakes as wedding cakes in Britian - I had not known that before the wedding. I'd like to see a photo of the inside of one of those fruitcake wedding cakes. Is it like "our" fruitcake?? |

easy bake wrote: Is it like "our" fruitcake?? Absolutely nothing like ours. I took a class from a British wedding cake designer and tasted their fruitcake. It's really excellent. Not for everyone, but very, very good. The fruits macerate for at least a year, and the cakes age for a long time. My guess is the royal family got the cake started quite a while back. I'm not surprised they chose a fruitcake...it's absolutely traditional. Amy |

There seems to be a discrepancy in the recipes. I found this at another site. A royal wedding cake made of biscuits? Really? Yes indeed, broken up (Tee Biscuis) and mixed with dark chocolate, condensed milk, a bit of butter, some nuts, raisins and some optional glace cherries and then bunged in the freezer rather than baked in the oven. |
