Another tip: I use an electric griddle instead of a comal. It might not be traditional, but it makes it way easier to keep the heat consistent, plus I can cook 4 tortillas at once.

I've been looking for an excuse for an electric griddle for ages. I keep finding work-arounds, plus most seem wildly inconsistent in heat (people, get a thermal cam, they are only $500 now, take pics of all the models), but that is a vey very good reason to buy one. 4 at a time would save huge amounts of time!

Hmm, that one has pretty good reviews on amazon, is available at amazon.ca, and is reasonably priced. Click! And its on its way, thanks for the pointer. I've been cooking pancakes fairly often lately too, so it should good for that too! Even my large crepe pan didn't hold enough pancakes, really, and I was also using that pan for tortilla.

Glad I could help!
And yeah, I use that griddle for a LOT of things. Not just pancakes and French toast, but also tortillas, Greek pita bread, and other flatbreads. It's just much easier to control the heat than a pan, and much larger. I've owned and used more expensive griddles, but they didn't work as well and where harder to clean.

Well, I got it, and fired it up for pancakes this morning. I will admit, i was shocked at how well it worked. Now I'm quite enthused! For example, made 3 quesadillas last weekend; used three pans. This would have made all three, no problem! Most more gentle heat, low thermal load things which don't splatter like crazy should work. That would be a few things, at least. I'm impressed with its overall performance, with at least one usage anyway.
