I made these tonight and they were very good, and very impressive to look at.
http://www.epicurious.com/recipes/food/views/roasted-red-onion-flowers-51238840The only problem with them was that I bought "normal" sized red onions which made a really big side dish at one onion each. 1/3 of mine is in the fridge to go into an omelet later in the week. I either need to buy much smaller onions or to find a way to make it the entire meal. I was thinking I could stuff with some browned ground turkey and breadcrumbs and make it a light dinner by itself.
This will go into regular rotation, at least from Oct - May. I generally won't run my oven for an hour in summer for anything except special occasions.
