Post subject: | Apple Pie Jam |
For some reason, I never crossed paths with Apple Pie Jam until a very small jar was a favor at a relative's wedding last fall. That very small jar is almost empty and the separation anxiety is setting in so forcefully that I may have to make some when the "Running of the Spies" happens at my favorite orchard this fall. Some research has me believing that Jam can be canned in a water bath and that a water canners and stock pots look a whole lot alike. I only need to add a rack to be in business, methinks. Any favorite recipes or advice? |

Hi Jim Do you have a recipe for that jam? I have this : http://www.amazon.com/Prepworks-Progres ... B007QT4GO4 and use it in my stockpot for canning. When I googled canning racks and looked at the images someone made one out of the lids. |

I have only Googled for a recipe, but they all seem very close in the proportion of apples to sugar to pectin. Only the spices are to be worked out. It appears that 6 half pint jars are are not that much more work and take fewer apples than a 9" pie. I think I will also can some apple butter. I probably lost a quarter of the apples I picked last year because of my lack of ability to preserve them. Since making my own vanilla has been-there, done-that kind of feeling, I want to move on to apple products for play dates in the kitchen. |

I can attest to apple butter being a wonderful way to preserve apples. And in a pinch if you have apple butter and puff pastry you can make apple bites as a sweet dessert or savoury appetizer (with brie) |
