Right now my favorite is Roth Kase's Moody Blue Smoked Blue Cheese. It's freakin' addictive!

There is a British cheese guy in Zurich and he sells this blue that is in an orange cheddar type cheese and is very hard. He keeps telling me the name and I keep forgetting (Stropshire???). It is very strong but great to used shaved over salad or pasta. I really want to try the smoked stuff though. I will have to look for it when I am in the States this summer. I will be in Cleavland so I bet I can find it in that incredible market.

I love blue cheese, but Roquefort is my absolute favorite. The combination of salty, creamy, sheepy, and funky is just right and sooooooo tasty. Especially when served correctly, at room temp. I've tried other kinds, but nothing can beat Roquefort for me.

Hi,
We have no decent cheese in Springfield, IL.
When traveling we look for fresh Cabrales (when old it becomes acidic), fresh Blue de Bresse and Gogonzola Dolce. Three different cheeses and all are wonderful.

One of my new favorites is a Cambozola. I think it's a cross between a Gorgonzola and a Camembert. It's soooo creamy, but still sharp.

I had a serious aversion to blue cheese until I was in my 30s. Now, I can't get enough of it. I'm a particular fan of gorgonzola, but I think that's because I just bought some for a cheese plate I did for dessert last weekend.
When I was in culinary school we did cheese tastings every Friday, and the week we did blues, the one blue non-blue cheese eaters could tolerate (somewhat) was gorgonzola dolce. It's an easy introduction to it.
