This weekend is the annual sausage making blitz at the deer lease, I sure hope we don't break last years record of 1000lbs.

I was looking through Thomas Keller's Under Pressure, and a recipe caught my eye that requires polyphosphate (or, as we affectionately refer to it at the restaurant, "meat glue"). In looking under his "sources" section of the book, he points to this website, which has a lot of sausage making supplies. Amy |
