Hmmm, wish I'd thought wild rice earlier. I'm already committed (now) to making something high in vitamin A.

All,
I ended up making a pumpkin-sweet potato gratin, based loosely on a recipe from Greens cookbook. It was delicious, but took about 4.5 hours to make, so I doubt I'll make it again. Recipe to come when I can get my pictures online.
