We made BRITU (Best Ribs In The Universe) for Canada Day on Friday (the brits where happy to see the back of us, so long as we pretend to be loyal), along with some fries (cooked twice, the right way). As Pete says, it is an excellent recipe and I've made it many many times. I keep meaning to try some other smoked rib recipes, but then keep thinking why bother, these are the best in the universe.
We only had two guests, but they were pretty high maintenance (in-laws with picky palettes). The ribs went over fantastically well, in spite of one of them professing to not like ribs (only after eating them, of course, and liked *these* ones, and stuffed herself silly)
Jeeze, Kathy's Pete, is that smoker new or something? I could never get mine looking that pristine.

Pete, those are some meaty looking ribs, absolutly gorgous!
Mary, love the patriatism along with dinner! Cute. Do I see hard salami, artichokes, tortellini, tomato's, salami, olives ???

We had so much red, white and blue your head would spin. Friends are visiting from the US and we had bunting galore. I post a couple photos when I get them off the camera. And that is what you see except one of the salamis is chorizo as I someone ate the other package of salami for lunch when I wasn't looking.

We ended up making marinated flank steak, grilled white corn, italian fried fritters (pancetta, onion, herbs, flour, yeast and lots of parmesan, really good), homemade s'mores, carrot cake, salads and margaritas. I am really full a day later

Fuzzy I used this recipe that Jean posted http://www.toptastes.com/cgi-bin/ubbcgi/ultimatebb.cgi?ubb=get_topic&f=14&t=000266I marinated the pasta, artichoke heart, olives and cheese. I think roasted peppers or sun dried tomatoes would be good on this too. Also on the dressing, I used white wine vinegar and added some Penzey's tarragon heavy herb mix (French something or Paris something, no salt, just herbs) instead of tarragon vinegar. As written it makes a ton and they are the kind of thing you eat one or 2 of so you might want to consider that. Mary
