Our last Treasurer of our Dart League borrowed (I'm being nice) money from our league and now we don't have enough money to pay for our banquet. I offered to make mini cupcakes for our dessert. I have four mini cupcake pans, so I can bake 48 at a time. How many cupcakes should I figure for each person? We are planning on 125 people.

If they're all the same kind, I'd say two. If they are different, I say one of each. fitzie

Todd, anything else on the table? I'd consider doing bars to add to the table if not. They can be cut small like mini cupcakes and you can make WAY more of those faster.

I am making Date and Carrot cupcakes. I am donating these along with 12 gift certificates and 50 vinyl car decals.

Just how mini is mini? A one bite cupcake would mean that most folks would want three or four. A three bite cupcake? Two is fine. I wouldn't embezzle from a darts league myself. I'd be worried about being made the bullseye!

Becky, my thoughts too. Todd, I'd say make 4 batches and tell someone else to do something. Carrot and Date together, or Carrot muffins and Date muffins? What recipe(s)?

I'd do one of each per person. Some will eat one, some two, some three and some none.

They sound yummy. I would think more than one per person.
Sounds like something that would keep well for a few days, so you could make them over a period of time, or freeze then thaw the morning of.
Are you totally decided on the minis and not full size? bigger ones might present better, more dramatic.

Good News!
Our past treasurer paid us back. We now have enough money to pay for a caterer. I'm happy, because my mom who was going to help me with baking all these cupcakes had to leave today for 5 days.
