All,
So, I had plans to do fish & chicken adobo on the grill for the 4th. Vetoed by my MIL; apparently 5-6 of our guests think paprika is "spicy". So, back to grilled salmon.
What are y'all doing?

Well, tomorrow I am catering (and doing all the decorating, and of course the cake) a small outdoor wedding for my husband's friend. They were going to go to a wedding chapel at the Mall of America and I just.couldn't.stand it. Since they are on a shoestring budget, it's going to be at a local park, we've made all the decorations, and are having a good old-fashioned BBQ - pulled pork (with bride's & groom's sauces), sweet-and-sour coleslaw, potato salad, and watermelon salad. They couldn't decide on a cake so the bottom layer is red velvet and middle layer is carrot cake. The top layer is one of each (don't plan on serving that one). My husband went online and got ordained so he could do the ceremony. He has developed a really nice secular ceremony and they've written lovely vows. It's going to be interesting, since it will be nearly 100 degrees tomorrow. The cake is staying at the house until after the ceremony, and the cold salads are going in a "shabby chic" washtub/stand with ice. It shouldn't be a problem to keep the pulled pork hot.  On the 4th we may do a brisket and go to my cousin's farm.

You are a great friend Darcie! A Mall of America wedding sounds less than romantic. I am jealous of your husband, I so want one of those liscences and the power to pronounce something.
I am leaving the US today, arriving on the 3rd so am missing all the festivities here. I usually do something on the 4th but am skipping it this year.

On vacation this week ("staycation") so preparing lots of snacks and BBQ stuff. So far: guac, David's Dilled Havarti, Asian BBQ Chicken Thighs, Black Bean and Edamame Salad, Potato Salad, Cheesecake with lemon curd, and still to come, BBQ Pork Tenderloin, BBQ Romaine, and I imagine lots of leftovers.
