I have invited my neighbors to an Easter brunch and I am having trouble thinking of a menu that pleases me. I like the idea of a strata or quiche but, other then some American breakfast sausage, it all feels too carb heavy.
What would your brunch look like?

We always have Ambrosia which consists of oranges, grated fresh coconut, a bit of sugar, and cream sherry. Last year I didn't have any cream sherry so subbed Grand Marnier and I have to say it was very good. No cherries or marshmallows, please.
Asparagus would be good, too

Not all that unusual here, Frank. Even on Easter! Baby goat is the more traditional cute animal meal choice.

Bagels with every conceivable topping, a couple varieties of frittata (at least one with asparagus), and a big fruit salad.
Or -- Thin slices of country ham, biscuits, and caramelized pineapple rings.
Or -- Quiche with smoked salmon, dill, and feta; CI's asparagus vinaigrette salad, and strawberry soup with a little dollop of crème fraîche on top.
We're not having brunch, sadly, but I am making poulet en cocotte for dinner.

Jesbelle, Is that CI salad the "Jumbo Asparagus Salad with Parma Ham, Parmesan, and Lemon Vinaigrette", from 1993???? I'm looking for a good one for my brunch..... Thanks, Karen

It is the "Asparagus Vinaigrette with Sieved Egg and Pickled Pink Onions" from May of '95. I like it because it just looks like Easter what with being all green and yellow and pink. That one you mention sounds really good, though.

Mary, I love the CC Potato and Sausage Popover Breakfast Casserole. You can change some of the ingredients, it is easy, and to me not as heavy as usual dishes of this type. I have a note that it keeps well. It is the one baked in a springform pan. Let me know if you'd like the recipe.

Alina, I would love that recipe, it sounds good. How far ahead can it be prepped? I also love the idea of an asparagus salad and some kind of fruit salad (although booze free this time, I think I will make that ambrosia for a more adult centered event).
