I haven't done it yet (going out to the garden until dark), but I am making some Szechwan eggplant (16 cloves), which I am going to use some of that dried eggplant in. Works great, as the EP gets sort of mushy in this dish, anyway.

Well, here in Portland, Pizza Week is overlapping with Passover. Showing just how small the Jewish population here is.
