Andy has been put in charge of the bar for a work-related fundraiser this weekend. Thing is, the person in charge of the event has informed him he wants to use up a whack of white rum leftover from some event last year. I'm not sure what the dinner menu is, but I do know it's not going to be "themed" to go with white rum. Any ideas for cocktails that wouldn't be too obnoxiously sweet? Amy |

Hot buttered rum....I use a friend's recipe that combines softened butter and vanilla ice cream and the spices. You just spoon a dollop into the mug, add rum and hot water....I served it at the Lodge Club at Snowbird when I managed that place and it was a hige hit. Ilene Hot Buttered Rum Mix 1 lb butter softened 1 lb brown sugar 1 lb powdered sugar 1 qt vanilla ice cream 2 tsp cinnamon 1 tsp nutmeg Blend together until smooth and keep in freezer. |

Pulled a couple of cocktaildb.com: Hibiscus Cocktail 1 1/2 oz light rum 1/2 oz fresh lemon juice 1/4 oz dry vermouth 1/4 oz grenadine Shake with icea and strain. Rum Manhattan 1 1/2 oz light rum 1 oz sweet vermouth 1 dash orange bitters Stir with ice & strain, add lemon twist. Floridian Cocktail #2 1 oz gin 1 oz light rum 1 oz orange juice Shake with ice, strain. Long Island Iced Tea is another option, helps you use up a lot of things! |
