Thanks to all for your kind words. I highly recommend the china box next time you need to feed a crowd. It was very much dinner and a show with people watching the pig come out and standing around watching me "carve" and snitching pieces of skin. It was really perfect for a party.
I made cannellini beans and escarole last week, so I probably won't do white beans again, as good as that sounds. Black beans are a possibility. Someone else I was talking to mentioned Green Pork Chili which also sounded good.
We are about to finally get a cold snap, so there will be definitely be some kind of soup happening.
