I ordered a 45 pound whole butterflied pig today to be cooked in a china box next weekend for my husband's 40th birthday party. And, I found out that the person lending me aforementioned china box has to work all weekend so I am on my own for the cooking and carving. This should be interesting. :)

I had to google the china box. I was thinking porcelain. I think youtube is going to be your friend.

Now that I think about it, it doesn't surprise me that a china box isn't something everyone is aware of. They are ubiquitous here and it didn't even cross my mind. The company that makes the commercial box has an excellent checklist which I will be making use of, and I am not so worried about the cooking (even the prep and marinating). Getting the pig from the box to the table looks challenging, and I have not ever carved a whole pig. YouTube will definitely be my friend.

When I first started looking, it was looking like I would have to go about 90 mins away to a farm and get a pig "on the hoof", because the local grocery stores will order the pigs for you, but they come frozen. I have no place to defrost a 40 pound pig for three days so I was a bit worried. However, the local butcher shop has one frozen (likely left over from their Noche Buena orders) and will gladly thaw it and then butterfly it when I pick up. I am quite happy about this!

It should be fun! Grocery shopping this weekend to make fresh mojo and all the sides.

I've never heard of a china box, but DH's family does a slow cooked whole pig roast (with the pig butterflied). Once it's done I'm not sure you will end up having to do much carving as if it's at all the same, the meat becomes so tender it just pulls off the bone, and the fat renders out so you get cracklings from the skin. Everyone just uses tongs to pull off what they want straight from the cooker. It's much like pulled pork only without the BBQ sauce, and it is delicious!

I've had whole roasted pig once, and it's still a strong sense memory for me...so, so succulent.
