I've used several kinds of sausage to make a riff off the Olive Garden's (no snark, please) Zuppa Toscana (one of hubby's favorites). I don't have a recipe but here's what I do: saute onion in oil or butter, add sausage (pinch off small bits), add garlic (if not in sausage), broth/water, cubed potatoes, paprika (or Penzey's Forward seasoning), salt & pepper, and a few allspice berries and simmer until potatoes are done. Then add chopped kale and heavy cream and heat through; adjust seasonings.

I think that my go on the menu this weekend, Darcie. Less sinful than the other recipe and I plan on doing some sinning tomorrow.
