CI’s 2011 thin crust pizza comes very close to matching the NY style from my favorite pizza joint. The dough is very easy to shape and the cooking procedure that moves the pizza stone from the bottom of the oven to the top makes it possible to get a slight char on some of the cheese without incinerating the bottom. CI also jumps on the Semolina train with this pizza and abandons corn meal as their pizza peel lubricant of choice.

Between Reinhart's recipe, Italian 00 flour and Myhrvold's Modernist technique for baking pizza, I have found the nirvana of approaches. Super thin, extremely crispy and really fast.

I'm sticking with this winner.

JB, yep, smashed, with a few garlic cloves boiled with the taters. The best part is they were potatoes from my mom's garden, Yukon Gold, yummalicious.

I made Cook's Country's Carrot Cupcakes today...the texture was good but the frosting was a bit too sweet for me...a definite keeper.

I made Coconut Cupcakes using a recipe from Joanne Chang's "Flour" book...she has a recipe for Coconut Cake and I used this batter for the cupcakes...I had a lot of frosting and a bit of batter left over...the texture and taste of the cake was good...very subtle...the frosting was way too sweet IMO...my friends loved them....

Thank you Mary...you're so gracious...yes, "Flour" by Joanne Chang is a baking book...it's a great book for beginners and advanced bakers...and she will answer your e-mails if you have any comments or questions...I made quite a number of her recipes and they are very good...thanks again Mary...

My friend wants to eat more healthy foods and asked me if I know of a good bran muffin recipe. I have to admit, I never had a bran muffin before!...I used Joanne Chang's recipe from her book "Flour". There is a mistake with the weight of the wheat bran for those of you who have the book...I added some vanilla and cinnamon to her recipe...topped it with a bit of streusel...the texture was wonderful...she uses creme fraiche...the taste was good although my friend will be the judge....thanks for letting me share!
